Ingredients (makes 12 muffins)

Wet:
- 2 large eggs
- ½ cup unsweetened applesauce

- 3 tbsp maple syrup or honey (or a sugar substitute )
- 1 tsp vanilla extract
- 1 cup blueberries (fresh or frozen – if frozen, don’t thaw)
Instructions
- Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin tin.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk eggs, applesauce, oil, maple syrup, and vanilla until smooth.
- Add dry ingredients to wet and stir until just combined (don’t overmix).
- Gently fold in blueberries.
- Divide batter evenly into muffin cups (about ¾ full).
- Bake 18–22 minutes, until a toothpick inserted comes out clean.
- Cool in the pan for 5 minutes, then transfer to a rack.
