Gluten Free Pumpkin Chocolate Chip Cookies

Soft, warmly spiced, and perfect for a cozy fall treat. These simple cookies use oat flour and pumpkin purée for an easy gluten-free dessert.

Ingredients

  • 1½ cups certified gluten-free oat flour

  • ½ cup pumpkin purée (not pumpkin pie filling)

  • 1 egg

  • ¼ cup pure maple syrup

  • 2 tbsp melted coconut oil or butter

  • ½ tsp baking powder

  • 1 tsp pumpkin pie spice

  • ½ tsp vanilla extract

  • Pinch of salt

  • ⅓ cup chocolate chips

Directions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a bowl, mix pumpkin purée, egg, maple syrup, melted oil or butter, and vanilla.

  3. Stir in oat flour, baking powder, pumpkin spice, and salt until combined.

  4. Fold in chocolate chips. Let the dough rest for 5 minutes to allow the oat flour to absorb moisture.

  5. Scoop onto the baking sheet and gently flatten each cookie.

  6. Bake for 12–15 minutes, until set around the edges. Cool on the tray for 10 minutes before moving.

Tip: Use certified gluten-free oat flour and check that your other ingredients are gluten-free if baking for someone with celiac disease.
