Healthy Pumpkin Spice Latte

Ingredients

  • 1 cup unsweetened almond milk (or oat milk, soy, or dairy)
  • 2–3 tbsp pumpkin purée (not pumpkin pie filling)
  • ½–1 tsp pure maple syrup or honey (to taste)
  • ½ tsp pumpkin pie spice (or a mix of cinnamon, nutmeg, ginger, and clove)
  • ½ tsp vanilla extract
  • ½ cup strong brewed coffee or 1 shot of espresso

(Optional: a dollop of unsweetened coconut whipped cream for topping)

Instructions

  1. Heat the milk & pumpkin: In a small saucepan, whisk together the milk, pumpkin purée, maple syrup, pumpkin pie spice, and vanilla over medium heat until hot but not boiling.
  2. Blend for frothiness: Use a milk frother or carefully blend the mixture for 20–30 seconds until frothy.
  3. Add coffee: Pour hot coffee or espresso into a mug, then top with the pumpkin milk mixture.
  4. Garnish: Sprinkle a little extra cinnamon or pumpkin spice on top.

Healthier swaps:

  • Unsweetened almond or oat milk keeps it dairy-free & lower in calories.
  • Pumpkin adds fiber + vitamin A.
  • Maple syrup is optional and easy to keep minimal.
