Gluten-Free Apple Muffins are a delicious, fun, flavourful apple muffin that everyone in your house will love.

INGREDIENTSApple Muffins

  • 1 large egg, room temperature
  • ⅔ cup sugar
  • ⅓ cup coconut oil
  • ½ cup applesauce
  • 1 cup all-purpose gluten-free flour blend
  • ½ teaspoon gluten-free baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 medium apple, cored, unpeeled, and grated (I used granny smith)

INSTRUCTIONS

  1. Preheat oven to 350°F. Line a muffin pan with 10 – 12 paper liners; set aside.
  2. In a large mixing bowl, whisk egg, sugar, oil, applesauce until combined.
  3. Add in the flour, baking powder, and baking soda, cinnamon, nutmeg and cloves and continue to whisk until combined.
  4. Fold in grated apple.
  5. Scoop batter (about ¼ cup) into your paper liners.
  6. Bake for 22-27 minutes or until the centre is set.
  7. Remove from the oven and cool completely before serving.
  8. Store in an airtight container in the refrigerator for up to 4 days.

NOTES

  1. Flour blend: You can use a gluten-free flour blend like Bob’s Red Mill 1-to-1 Gluten-Free Baking Flour.
  2. When working with or measuring gluten-free flour, spoon the flour into the measuring cup and level. Do not scoop your measuring cup into the gluten-free flour.
  3. If you don’t have applesauce you can use yogurt in place of the applesauce.
  4. Add in ½ cup finely shredded carrots, if desired for extra texture and flavour.
