Ingredients

  • 1 tbsp olive oil or avocado oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated (or ½ tsp ground)
  • 1 tsp turmeric
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 sweet potato, cubed
  • 1 zucchini, sliced
  • 1 cup cauliflower florets
  • 6 cups low-sodium vegetable broth (or water)
  • Juice of ½–1 lemon
  • Salt & pepper to taste
  • Fresh parsley or cilantro (optional)

Instructions

  1. Heat oil in a large pot over medium heat. Sauté onion, garlic, and ginger for 3–4 minutes.
  2. Stir in turmeric.
  3. Add carrots, celery, sweet potato, zucchini, cauliflower, and broth.
  4. Bring to a boil, then reduce to a simmer for 20–25 minutes until vegetables are tender.
