Ingredients
  • 1 cup creamy peanut butter (crunchy will work too, though I prefer the texture of the creamy)
  • 3/4 cup monk fruit 
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon kosher salt
  • 1 large egg at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup  semi-sweet chocolate chips
  • 1/3 cup old fashioned rolled oats or gluten free oats

Flourless Peanut Butter Oatmeal Bars with Chocolate Chips

Instructions

  • Place rack in the center of your oven and preheat oven to 350°F. Line an 8×8-inch baking dish with parchment paper and lightly coat with cooking spray. Set aside.
  • In a large mixing bowl, beat together the peanut butter, monk fruit, baking soda, and salt on medium speed until well combined.
  • Add the egg and vanilla, then mix on medium low, just until incorporated. By hand, stir in the chocolate chips and oats.
  • Press the dough into the prepared baking pan. Bake for 22 minutes, until golden and the top is set. Let cool completely in the pan. Remove, slice and serve.
