This recipe has got it all.

It’s made with just 3 main ingredients – walnuts, dates and chocolate – plus salt and coconut oil. The result is a candy-like tasting bar that’s delicious enough to satisfy any sweet tooth, and also nutrient-dense enough to be a filling snack.

PREP TIME: 10 Minutes 

COOK TIME: 1 Hour & 30 Minutes

TOTAL TIME: 1 Hour & 40 Minutes 

Yield: 8 Bars

 

INGREDIENTS:

  • 1 cup walnuts, pecans or nut of your choice
  • 1 cup pitted dates
  • 1 cup chocolate chips or carob chips
  • 2 teaspoons coconut oil
  • 1/4 teaspoon saltChocolate Nut & Date Bars

INSTRUCTIONS:

  1. Grease an 8×4 loaf pan or line with parchment paper.
  2. In a food processor, combine walnuts and date. Grind until pieces are fine and stick together easily, about 3 minutes.
  3. Scoop mixture into the loaf pan, using your hands to press down and flatten. Place in the freezer for 20-30 minutes.
  4. In a bowl, combine chocolate chips and coconut oil and microwave for 1 minute and 30 seconds, mixing every 30 seconds.
  5. Pour melted chocolate over nut & date mixture. Use a spatula or lightly shake the pan to distribute chocolate evenly. Optional: sprinkle the top with more salt. Place back in the freezer for 1 hour.
  6. Remove from the pan (if not using parchment paper, use a knife to gently lift from the pan) and cut into 8 slices. Store in the refrigerator or freezer.
