Roasted Carrot, Ginger & Red Lentil Soup

  • 6 large carrots, chopped
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • ¾ cup red lentils, rinsed
  • 4 cups vegetable broth
  • 1 tsp turmeric
  • ½ tsp cumin
  • Salt and pepper to taste
  • Juice of ½ lemon
  • Optional: pumpkin seeds or parsley for garnish

Instructions

  1. Roast the carrots
    • Preheat oven to 400°F (200°C)
    • Toss carrots with olive oil
    • Roast 25–30 minutes until soft and slightly caramelized
  2. Cook the base
    • In a pot, sauté onion in a little olive oil for 5 minutes
    • Add garlic and ginger, cook 1 minute
  3. Simmer
    • Add roasted carrots, lentils, broth, turmeric, and cumin
