Roasted Carrot, Ginger & Red Lentil Soup
Warm, comforting, and immune-supportive
(4 servings)
- 6 large carrots, chopped
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- ¾ cup red lentils, rinsed
- 4 cups vegetable broth
- 1 tsp turmeric
- ½ tsp cumin
- Salt and pepper to taste
- Juice of ½ lemon
- Optional: pumpkin seeds or parsley for garnish
Instructions
- Roast the carrots
- Preheat oven to 400°F (200°C)
- Toss carrots with olive oil
- Roast 25–30 minutes until soft and slightly caramelized
- Cook the base
- In a pot, sauté onion in a little olive oil for 5 minutes
- Add garlic and ginger, cook 1 minute
- Simmer
- Add roasted carrots, lentils, broth, turmeric, and cumin
- Bring to boil, then simmer 20 minutes until lentils are soft
- Blend
- Blend until smooth (or leave chunky if preferred)
- Finish
- Add lemon juice, salt, and pepper
- Garnish with pumpkin seeds or parsley
