Ingredients
- 1 cup white whole-wheat flour or gluten free flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ⅔ cup sugar
- 6 tablespoons unsalted butter, melted
- 1 large egg
- 1 ½ teaspoons vanilla extract
- 1 cup old-fashioned rolled oats or gluten free oats
- ½ cup dried cranberries
- ⅓ cup unsweetened shredded coconut
- ⅓ cup white chocolate chips

Preheat oven to 350 degrees F. Lightly coat a baking sheet with cooking spray.

Bake until golden brown on the bottom, 12 to 14 minutes. Cool on the pan for 5 minutes before transferring to a wire rack to cool completely. Repeat with the remaining dough.

Add the flour mixture, oats, cranberries, coconut and white chocolate chips and stir with a wooden spoon until well combined. Drop level tablespoons of the dough onto the prepared baking sheet, making 12 cookies per batch.
