The salty, creamy, feta is perfectly complemented with the slight sweetness from the sun-dried tomatoes. I love mixing oils with dried herbs when making dressings and marinades. I don’t always have fresh on hand but the oil and lemon juice bring the dried herbs back to life, marrying the flavors together perfectly. Top this salad with a bit more oil and slivered almonds and you have a simple, bright salad that gets better the longer it sits.
